I build recipes for depth, balance, and surprise—whether that’s a bright citrus infusion, a slow-steeped spice, or a caramel cooked to a precise edge of bitterness. My focus is flavor first. Exploring seasonal ingredients, subtle infusions, and balanced flavor profiles in a way that feels personal and expressive.

Maine has an amazing bounty of local products that can be used in chocolate making. The chocolate may come from 70 degrees north and south of the equator but the ingredients that make up the unique flavor and essence of each chocolate are often sourced as close as down the road.
